Maize (Makka chollam) Rava Kichadi



A wholesome quick recipe for breakfast. A better option instead of rice, good for diabetic patients.

  
Maize (Makka chollam) Rava Kichadi

Ingredients (serves for 2-3 members)
Maize rava 200 grams (1 ½ cup)
(If Maize rava is not available use lightly roasted Sooji- 2 cups alternatively)
Grated carrot - 1 cup
Finley chopped beans - 1/2 cup
Broccoli flowerets as per taste
(Optional-according to availability at the time of cooking)
Finley chopped big onion – 1(medium size)
Green chilies - 2 or 3 numbers (big size, as per taste)
Chopped Tomato - 1 (medium size)
Ginger - 1 inch piece (grated)
Turmeric powder - 1 pinch
Salt to taste
Coriander leaves chopped 1 table spoon

Water quantity measurement:
2 ½ - 3 cups of water for 1 cup of Maize rava
2 ¼ cups of water for 1 cup of Sooji

For the seasoning
Butter 2 tsp
Oil - 3 tsp
Cardamom -1
Cinnamon - 1 inch piece
Cloves - 2
Kashmiri chilly one big size (optional) or Red chilli - 1

Preparation
Measure the total water quantity and keep aside in a bowl.

Method
In a Frying pan put 2 tsp of butter and fry the masala ingredients listed for seasoning. Add the remaining oil and fry the onion pieces with little salt to golden brown.
Add grated Ginger and fry for a minute.
Add the chopped Tomato and sauté for a minute and then add the Carrot, Beans and Broccoli and fry.
Put the turmeric powder and add little amount of measured water and keep the lower the flame for 2 to 3 minutes.
Add the remaining water and salt to taste in the pan, close the lid to allow the water to come to boiling temperature. 
Check the salt of the boiling water. It should be little bit salty taste (not more salty). Add some more salt if required in this stage.
Now add the Maize rava or Sooji in the boiling water and mix it.Do not allow the Rava to form lumps in this stage. Close the lid and wait until the rava absorbs 90% water. Now lower the flame for approximately 5 minutes till the rava is completely cooked.
Decorate with chopped Coriander leaves and serve hot.        

Suggested side dish is Coconut chutney.
